I stopped eating rice, so a bowl of noodles once a week will fill my craving, gonna try this. I already have the nongshim udon noodles from Costco, are those any more healthy?

It sounds like a good plan to reduce the sodium content but I'm not sure that all the salt comes from the packet (1760mg of sodium is 3/4 teaspoon of salt).
