I'd say the biggest factors are your monitor's resolution, the refresh rate you are trying to play at, and of course which games and at what settings you are trying to play. It's really tough to say if this will work for you without further details. But if I had to guess, I'd say it'll be good enough.

You are comparing the wrong model. It's 3600 not 2600 and b450 not a320. This is the lowest price that I've seen for this model.

I'm not a daily gamer. I just want to start gaming since my work is stressful. I can afford that but I'd think it may overkill?
Definitely give this a try first, and if you find you really want to play with higher graphics or more fps, then you can decide upgrade after.
