This is getting upvoted and it is not just regular price but $0.08 more expensive than the 3-month average on Amazon. Chart attached for more detail. What am I missing?

Sodium nitrate combined with pink slime.
"Sodium Nitrate and Sodium Nitrite are used as preservatives and add colour and flavour to processed meats. The International Agency for the Research of Cancer (IARC) has reviewed ingested nitrates and nitrites and classified them as probably carcinogenic (cancer causing) to humans."

That being said, I love this stuff. Goes great in ramen noodles, between sandwiches, with some rice, or just by itself. In for one!

The purpose of contextual price information is to determine what a product is worth today. The farther you go back the less relevant the price data becomes to what today's consumers are wiling to pay for a product.
