The CPU + GPU alone are somewhere in the $1600-$1700 (conservatively) range

I build a similar rig and spend well into the 2k range
I build a similar rig and spend well into the 2k range
For a top-tier prebuilt gaming rig this is about 10-15% cheaper than building yourself.
No worries though... every DIY jerk will be like "I can build this for cheaper if I buy used parts, use a gray market windows license, and then hope and pray for rebates"
EDIT: Per a helpful post from another user, I wasn't trying to say that you (eculley) were a DIY jerk.

I just... why only 2666 MHz RAM? I know it's less important on an Intel system, but you can get 3000 and 3200 or even faster for "$150" (which seems to be the only overpriced option here). I mean you can get that fancy RAM that lights up and dances.

$479 for cPU
$1100 for GPU
$150 for Platinum PSU
You're at $1729
You have $251 to spare... but is the RAM and SSD and the rest really $251? Of RAM were higher speeds as you said, you then really have SSD wasted... and would likely have to purchase an extra SSD fit for that gaming-grade.
But if you're satisfied with it... I guess it's a good deal since you can't build it for cheaper? But if you were aiming for that class, it feels gimp unless you upgrade the RAM and SSD and spend another $150 on RAM and another $180 on a 1TB Samsung EVO+ SSD. I know they're optional... but... yea feels gimped. Maybe flip the included RAM and SSD to get some cash back for the upgrade?
This + $330 in upgrades (total = $2310) and you got yourself a rocking PC which is going to be about the same as building one yourself (face it, you're going to get 1TB SSD and 32GB PC4-3200+) if you're already ready to spend this rang. ;-). Only difference is you might get the parts you want/preferred brand if you BYO.

Add to it your upgrades +$330 and you total will be $2120.99

RAM, SSD, motherboard, and case. Those last two are non-trivial and - for anything decent - cost more than the RAM and SSD. You'd be spec'ing some cheap-ass components to get all 4 of those for under $250. (edit) I do agree that the 256 GB SSD is almost useless, but it would function as a perfectly good boot drive with reasonable space for basic apps, and then get a 2TB SSD and install all of your game files there. Also makes it easier if you decide to get a smaller game drive and upgrade later since you don't have to migrate the OS.
