VERY tempting - But I don't see the toner as being "extra" for the AIO versions - It looks like they each come with the starter toners, and nothing really extra - And when you buy a new printer, they come with the starter toners, anyway.

They come with standard cartridges, not the starter.
Per the product page for the MF743Cdw: This product comes with two free gifts which includes a set of standard CMYK toner cartridges (valued at $399*) and a 2-year extended service plan (valued at $90*) to provide three years of service coverage.
In short, I'm not sure it comes with starter cartridges and standard ones (seems like possible just standard). Even so, it seems like a great deal because the standard cartridges print about twice as many pages as starter cartridges + 3-year extended warranty.
Thank you very much OP, ordered the MF743Cdw. I currently have an older AIO Canon that my father in law gave to us when he closed his office. It takes forever to warm up and is very slow at printing. I've been on the lookout for a good deal on one that prints faster and supports AirPrint, this one checked all the boxes.
I'm tempted on the Color MF644Cdw for home, it looks like it takes generic toner! I wouldn't mind having a dual side scanner/copier at home too.
My 9-year-old HP color cp1521 is having issues, I've got toner leakage issues and not certain where it's coming from (I've cleaner and replaced that cartridge).
I bought a B&W Canon MF247dw in my classroom and love it (only 1-side scanning though).
I actually started looking for 644 or 743 a week ago hoping to get them for around $299 new. What is the difference between them?

What part are you reading that makes they are "starter", they're not the extra capacity. But they seem more than the 500 page starter ones you get sometimes. (I think that's what the OP means).

I pulled the trigger for a MF644Cdw, with the full cartridges and additional warantee, seems like a good deal. The 644 seems just a little bit slower than the 743, but plenty fast for use at home:
