As someone new to the Nintendo switch, isn't it way better to buy physical games as we can always sell it later?
Digital is very convenient for a portable system.

Tough call. Depends on you honestly. Some people are willing to pay more to for the convenience of not having to carry physical media around.

I like the digital versions because I can install them all onto my Switch and they're all ready to play anytime without having to switch out game cartridges. You're unable to resell the games, but it makes it more convenient. I see your point though.

I'm digital primarily because I see the Switch as something that I'll keep for a long time, that and convenience. Was strictly physical for PS3, half and half on PS4, but convenience is huge when you are building a library and you have a portable console.

Certain games also lend themselves more to digital copies as well. Games that you'd play for only short periods of time, ones you play religiously (Animal Crossing maybe), or ones you'd always want to have handy.

If you ever plan on owning more than one switch then you absolutely want digital. Play on multiple devices at the same time.

Just purchased a Switch for son's birthday next month and looking to add Mario Kart and Breath of the Wild as cornerstone games. Also haven't purchased memory yet. Is this the right opportunity to check those three boxes or should I wait for a better deal on the games (ie meaningfully less than $60 per)?

Digital is more convenient and (maybe?) loads faster than physical? I tend to buy physical for games that hold their value if I want to resell later down the road. Physical is also better if you have a bad connection and the game file is huge

This is a pretty good deal if you had already planned on getting a microSDXC card as well. Those two games average about $40-45 each on sale. There might not be another sale before his birthday comes up.

Basically yes. You do own the game's. Only downside is inconvenient of switching carts in and out.

With digital you can "game share" with somebody else and play the SAME copy of the game at the same time without having to buy 2 copies. So...not always. Depends on your use.
