Eiither way, light roasts to me should be region specific, ie: Sidamo, so you can discern those profiles.
Also, highly recommend blue macaw coffee roasters on eBay. Pricier, but great quality beans.
Why would you want the Italian roast? It's overroasted and about as bad as it gets.
Why? Light roasts are actually properly roasted and have more caffeine.
Dark roasts are burnt beans.
