Ultra mobile has recently revamped their paygo plan to include 100minutes/100text/100mb data for $3 per month.
Additional minutes and MB are $.03 if you put money in your paygo wallet.
Paygo sims can be purchased from Tmobile B&M stores only.

I've recently ported my number to Libertywireless and service has been good so far. Also Tmobile. I paid $60 for a year of unlimited minutes and texts. Whenever I want to use data, I just buy $5 top-up for 1GB.
The cheapest way is a Tracfone sim + 1-year service forwarded to a Google Voice number. You can buy one of those at eBay or HSN,
Register the sim with a zipcode where only Verizon is available, and you will get Verizon service for a year.
There's no rollover on this, correct? It's use it or lose it each month, right?
Also, if you use up your data, it looks like there's no paygo; it looks like you need to buy a day pass. Is that correct?
Is this closer to a traditional cell plan or one of those that routes everything through data? I need to renew my aunt's plan soon and she always had trouble on these cheap T-Mo MVNOs because you needed an app to place calls since it was all VoIP. She'd primarily use it at home with WiFi Calling potential, but on-the-go she'd need to be able to just open the default phone app and type in a number or tap a contact.

Per the website 3 cents/mb once the 100mb is used.

Regular style plan, they have some kind of partnership with tmobile, since thats the only place to buy the simcard.

Sorta, but the comparison w/ Tracfone is somewhat apples to oranges.
With tracfone, you're buying buckets of minutes/texts/data that last for 1 year. So yes, you get 1200/1200/3gb for $60/year, but you can use the minutes/text/data at any point (eg you could use 1000 minutes the first month then use the remaining 200 minutes anytime over the next 11 months.) Plus, anything you haven't used rolls over if/when you renew.
Whereas with Ultra Paygo, its 100/100/100 per month; no rollover from month to month. BUT, it's cheaper on an annual basis. So pick what works best for you.
