Asus X570-P is pretty decent at $150, or Asus X570 TUF for $190 for a better VRM configuration.
The question is whether XT is worth a $40 premium over vanilla 3600, Id say no unless you like to tinker / overclock since the XT is a higher bin.
Edit: prices have changed on old 3600s. 3600=$150, 3600X=$180, after discount. This means 3600X costs same as XT so no reason to buy it, and $30 premium over vanilla. Could be worth it if you want that slight boost in single core performance.

I feel like there's too much risk buying B450 at this point in time..unless you don't plan on upgrading to zen3 i guess.

No PCIe Gen 4 support (hopefully obvious, but I said it anyway)
Only the top 16x slot and the top m.2 slot are PCIe gen 3
Any other m.2 or PCIe slots are PCIe gen 2.
With B550, those additional slots are PCIe gen 3 and the top slots are gen 4
With X570, all slots are gen 4
Now, you are limited to number of PCIe lanes that will certainly be fewer than what seems to be available (except on itx boards) but if you want a fast SECOND NVMe drive, keep in mind that PCIe gen 2 will be half the bandwidth as 3. Still about 3x faster than SATA... but not as fast as it could be.

I'd recommend it except for its lack of sys fan headers. Okay if you get a case fan set with a hub.
