I was just at the local Costco and saw that the beef tenderloin filet mignon is $9.99/lb. One of the workers at the meat department said that he doesn't know why it is so cheap, but it's currently selling for that price (no coupons, special mark downs, etc.)

"First let's define what a cow is. A lot of people think any bovine is a cow. That's not true. A cow is a female who has had a calf. Since they calve for the first time around two years of age, she will be three years or more typically. A steer is a male animal who has been castrated. The only reason to produce a steer is for beef. So we feed them appropriately. They are usually slaughtered at around two years of age, having been fed for high quality beef for about 6 months.

If that cow is fairly young, and is fed with grain (or on grass) to a higher condition of body fat, she could be as good as steer beef! But typically steers are fed specifically for the most efficient and highest quality meat. Cows are typically entering the food chain because they are not productive, and are probably thinner. So they are made into ground beef. We do consume a lot of cow beef in the United States, but it is as ground beef."

Most dirt cheap beef tenderloin is previously frozen cow tenderloin. Kinda like the $2.99 T-Bone steaks at Save-a-lot, cow meat purchased cheap, then they split out the few cuts more valuable than grinding for hamburger. Still a tasty steak, but not a $250/plate steakhouse signature item.

last month my costco accidentally priced their choice tenderloins at $11.99/lb, usually around $17-18 at this location. Picked up 3 since there was still a meat restriction in place, went back the next day and it was back to $17 Frown

Saw this at Edmonds, WA. There was a group of older shoppers crowded around and discussing how cheap it was. An employee was there too saying how this is the cheapest he's seen it.

Tenderloin is not my favorite cut and I just stocked up on prime tri tip a couple weeks ago, or else I would've gotten it.

If you pick up a whole tenderloin, be sure your know how to process it into the different cuts of meat. It's a bit of work, but the end results are well worth it. I am spoiled and only purchase the cheaper grades of tenderloin when they go on sale around $6.99. I usually sous vide them, but be sure not to sous vide them too long or else they tend to get a little mushy.

I've been eating sous vide eye round the past few months. Tastes better and is more tender than any filet I've ever had. 24 hours in the water bath at 131 and you will never pay more than $6 a pound for beef again.

C'mon on now. I sous vide tougher cuts with good results too but you can't beat a filet you cook it correctly.

Sous vide keeps it tender during the whole process, grilling it will make it tougher and without much fat also drier

The best way to prepare filet is to skip it and get rib eye.

decent steaks, not as good a quality as i get from ym local butcher, but the price is worth picking some up at costco
