Might this work in the car? I've got a daughter in a booster seat who loves to color and draw...
We have 2 of these at home for kids. We use them not just for learning but kids use them as tray to hold food plates when they sit down to watch TV. I found them very useful, I believe we got them for $3 with coupons

We have this. We've used it during SIP. If it's the same one we have, it's pretty sturdy considering the low price. As someone else mentioned, can be also used as a craft tray or a food tray.

My wife has a BUNCH of these in her kindergarten classroom. The kids loved them last year but we managed to snag them (or something very similar) at Walmart for $1.5/ea. These are easy to clean, her students loved how independent they could be, they stack, great for flexibility in the room/home, etc. Worth it at this price even!

I have had few of this style so far. Only caution - do not let little one step on or sit on it. And that is the hardest part to control😄
I have one with Minion character and it is better, sturdier than any other.
