I just got an Instant Pot for Christmas (Duo Nova, 6 quart). So would I use something like this instead of the stainless steel one that came with it?

I got the 6 quarter version, not good. If you see the pics, it still sticks. Not as much as stainless steel but not as good as the old-fashion coated ones.

No, just learn to cook in the stainless. It's great, and holds up. I cook with my instant pot all the time, and the stainless pot is one of the biggest PRO's of the instant pot branded units. I've never had issues with things sticking in my instant pot, but I have used stainless pans in the past. Keep it oiled when you use Saute mode, and deglaze it when you start adding the liquid. There is so many great recipes to start learning cooking in the instant pot.
If you need a non-stick pan to fry an egg, use one for that. Otherwise, 99% of cooking can be done on Cast Iron, stainless or Carbon Steel when seasoned and cooking correctly. The stainless steel inner pot on my 8 Qt Instant Pot has held up for years of cooking and can be made like new at any point in time with some barkeepers friend. I've never found any need for a non-stick pan when cooking in my instant pot.
