That's how it is with my Costco Visa, and actually my Quicksilver Card the entire purchase price needs to be put on the card. I was going to use these GC to purchase two new Macbooks for the wife and I, but she has terrible luck lately with tech and want the piece of mind of her machine having at least some Warranty wiggle room, so purposely put $650 of her machine on the Costco Visa, the rest with GC. $650 should cover at least many/some of the internals if she has any problems within 3 years.

It is automatically added to your account, and it does mention ending in a 4 digit number. You can combine them, but I don't see a button to gift them.
There is a barcode so if you want someone else to use online I guess you can send them that? To use in stores you need can use an "access number" which is sent to your email you registered target account with. Also it takes quite some time to get right now, maybe 3 days after you place order. And you cannot use gift cards on purchases of other gift cards.

Can you indicate how to add the gift cards to one's Apple account? Does it go to itunes?

Apple merged all their credit's together. If it shows up in your itunes, it will show the same balance on your app store, also if you checkout with Macbooks/iphones etc on Apple.com on the same account it will prompt you on checkout to use your balance there too.

In fact if you buy physical gift cards, on the back of them it says you can use it to buy anything on Apple.com and has icons for all the things.

I am planning on getting mac mini 16GB (Mostly because MacBook doesn't have a dual display). Since it will be on the desk, I plan to spend 100-200 to get an SSD enclosure and throw in a 500 GB SSD (~500 MBps) R/W speed. So, the thunderbolt won't be a bottleneck. Heck, I can even get an NVME SSD 1 TB and get a TB enclosure and should be able to get 1 TB expansion in about ~$200. Which is exactly how much it cost for going from 256 to 512. Any opinion on this?

Log in with your Apple ID in iTunes. It can be used for devices (not limited to music and apps)

Total $1375.87 for 2 iphone 11. 128gb
Used 14 $100 apple cards from target which with red card came to $96 each
So $1400 Apple gift cards cost $1344 with red card...minus $280 recieved in target gift cards(good as cash to us)...
So $1344 - $280 = $1064
Minus 2 $50 apple gift cards during apple event
=$964 divided by 2 = $482 per phone...

Brain is now fried and i feel like i am missing something

You Apple account is your iTunes account, you use the iTunes app and the redeem button as usual i guess. It specifically mentions United States on apple's website in buying from Apple.com physical products so if you don't live in the US I wouldn't do it.

I've thought about doing something similar. I even had an i3 Mac Mini I ran a Sandisk Extreme external SSD (msata based internally). The only caveat is that Apple's latest SSD's are truly blazingly fast so external storage won't be as quick as the internal. Also USB 4.0 vs USB 3.x is super messy. Apple's official specs say Thunderbolt 3 (up to 40Gb/s) or USB 3.1 Gen 2 (up to 10Gb/s) for these m1 macs. So if you end up getting a superfast USB 3.X SSD that does greater than 10Gb/s you might find it won't go full speed.

That is right. I plan to pay half in gift card and half in Costco city card for new iPhone 12. If you look online, replacement cost of new iPhone is about $500. This way I am still fully covered by credit card.
