The bigger poopy part of it is that these "super fast" devices aren't really very impressive in real world activities. You're shaving seconds off of computing time daily with them.

500gb is plenty. Windows 10 is only about 15gb give or take.

Depends on what you're using it for. If you can afford it, maximize SSD storage (even adding in some 2.5" ssd drives in a desktop will always beat out any spinning disk).
But if you need larger storage for files accessed less frequently, can get spinning disk drives up to 14tb now pretty cheap.
For playing games and whatnot, you'll appreciate the faster load times by putting your games on the SSD, but some of these games now are getting into the 100's of gigabytes so... Maybe have a spinning disk drive for the games you play less frequently if that's your use case.
Just stick with a Western Digital drive and most of them are fine these days. HGST was my favorite, but WD owns them now and is eliminating the brand.

HDD doesn't matter. I put all my documents on my hdd and do my file transferring from it. SSD has no impact on it and vice versa.

Sony hasn't really announced what is compatible for the M2 expansion slot yet. I am however leaning towards no? Bc this is a Gen 3 and you'd need a Gen 4. This caps out at about 3.5 GB/s and they'd want you to match their 5.5 GB/s
