I like Nishiki a lot but they are at least 50% more expensive than other similar rice that routinely sells at $25 for 40 pounds at local Asian supermarkets.

There is nothing to be surprised. People in Japan and Korea (and China?) mostly eat sticky rice. It is just a different culture. To me, rice that is not sticky is not tasty. And most people in Japan and Korea use good electric rice cooker made in Japan or Korea to prepare perfect rice.

This rice is supposed to be sticky. You are not cooking it incorrectly. This rice is meant to used for sushi, crispy rice cakes, fried rice balls and other recipes that call for sticky rice. I usually cook mine in 2 parts water to 1 part rice for 20 minutes covered, then I let it rest for another 10 minutes covered with the heat turned off. Then when it is finished I season with rice wine, salt and a touch sugar. From here you can spread it out onto a pan to cool and then use it for whatever application you are going to use it for.
