The size. The #20 is 15/16" wide and 2 1/4" long , and the #10 is 25/32" wide by 2 3/64" long. So depending on how they'll be used, it's up to you. There's also a #0 that's even smaller. The dimensions are shown on almost any search result.
Biscuits come in 3 common sizes/lengths. #0 is smallest, then #10, then #20 is largest. The biscuit cutter tool can be adjusted to any of these settings, and you then insert that size biscuit. The longer the joint, the larger size biscuit you should use.

One slight correction is all three sizes of biscuits (#0, #10, #20) are the same thickness, but overall great informative response! The Length and width are what get larger [#0 smallest and #20 largest] (not thicker or thinner). Since they are all the same thickness the same blade on the biscuit joiner can be used, just set to a difference depth into the board that it cuts to use different biscuit sizes. It is always best to use the largest biscuit that will fit your work.
