Wasn't aware MP had an offering similar to the MantelMount. They are a PITA to install but worth it to save your neck.
In theory you could install the wall mount in reverse and keep the VESA mount that attaches to the TV in the normal orientation to achieve the effect you're looking for, as it looks like the front plate that the VESA mount hooks into is symmetrical. The only consideration I'd worry about is how much your TV weighs and make sure to leave yourself enough margin as you'd likely need to increase the tension on the spring to hold the TV up as you're working harder against gravity in the reverse orientation.

See step 11, as long as part EE is symmetrical you should be able to flip the TV and mount and follow the rest of the steps normally.

Anyone have any insight on if I could potentially reverse the direction I mounted a mantle style?

I'd like to mount the TV under a window and lift it up, blocking the window when in use. Then lower when not using. I haven't been able to find anyone else say they've used this way.

Any help would be appreciated.

I have the mount installed since last year and love it. It is perpetually extended and stays in place with no dropping.

Have you considered a cabinet with a motorized lift? We had one in our old kitchen that worked great.

We purchased the mantelmount and although it was expensive it was totally worth it. Can't speak to the this brand but I imagine it will do just fine. We have the mm540 which was 269, so just over double the price but submitted our install for the install of the month and they refunded half the price so ended up only paying $134.50.

I've had the above fireplace mount for 2+ years and love it. If memory serves me right there was an issue with the spring but I got a replacement unit. The only negative to Monoprices exchange policy is that they need to receive the defective unit before processing the exchange. So you can encounter some longer down times if something happens. Still recommend.
