Mainstays 'budget' stainless steel cookware are very thin and have little to no heat dissipation. Any burner you set them on, including hot plates, will cause significant hotspots on the bottom of the pan. Because of the tendency to have hot spots, you need to cook at medium or low temperatures for any foods that aren't watery soups or broths that can dissipate the heat naturally within the volume of the container. Have a big pot of spaghetti sauce you need to heat up fast? You can't; if you put your burner above medium or medium high, you're going to burn the food on the bottom of the pan even if you're constantly stirring the pot.
Now that being said, as long as you are patient, these work great. The stainless steel helps to resist corrosion and rust, and you can use rough brillo pads, steel wool, just about anything you want to clean the surfaces.
I bought a very similar set almost 8 years ago that I keep exclusively for camping and cooking on a grill over a fire. (And hot pads are always needed) the bottoms of the pots are darkened and have lots of soot that I don't care to scour off, but there really isn't any need to.
These aren't bad products, but you have to keep your expectations realistic, don't expect a set like this to be flawless or perform at a high level. Stainless steel is far far better than non-stick in this price range.
