I have decent stainless steel set and also my seasoned iron cast, When not in rush like in weekends I do my omelet perfectly fine on them. During the week, and in rush, I've cursed myself for being lazy and not using the my iron cast, leaving mess behind ruining my fried egg I intended for breakfast

Things cook up just fine in the tramotina and they look just as nice.
allclad is made in america. If this deal was going on while I was shopping I would probably sucker myself into it. If you have the extra $$$ go for it.
In cast iron, over time this process -- before and after cooking -- builds up a terrific non-stick patina. You CAN repeatedly season stainless steel exactly like cast iron, but the smooth steel surface doesn't allow the patina to hold on well, so it's not worth the effort. And one of the nice things about stainless is that it's not water- or acid- averse like cast iron, against which the patina is a barrier. But the quick pre-cooking wipes and preheat do still seem to help a lot with sticking on the steel.

They are, without a doubt, the very best stainless steel pans I've ever used ... and I'm 70! They heat up perfectly and clean like a breeze. Kudos to All-Clad.
Just wish they were more afforable, but I understand that extreme quality comes with a price.

I have one Cuisinart pan that's been pretty nice, and I really debated and spent more time looking at comparison/reviews than I care to admit (since the Cuisinart set is cheaper). In the end I pulled the trigger on the All-Clad. The only negative (besides price) I could find was people complain about the handle comfort -- but I don't understand folks that grab a handle from the top.
This should be a nice upgrade from my 23-year-old Tools of the Trade stainless from Macy's -- they really should have been replaced several years ago.
