Don't need to, I work in cybersecurity and am fully aware of how they track and use my data. They also dont have breaches like Target and Equifax. I have no problem with my data being collected because I know it's safe and I take the extra steps to protect access to my account.
Question... If you're that concerned about your Google account, I assume you use a unique password that you cannot remember for every online account? Because if you're concerned about your data security overall, that would be best practice...

Of course, I use self-hosted KeePass. And you are not fully aware of how they use your data and never will be. You are not Google. But by all indications you should be cautious, which sounds like you are, more than most anyways.
Safer yet, avoid them (and FB, etc) entirely (but at the very least dont make them the centerpiece of your smart home or allow their always listening speakers nearby). It's more about their building and keeping an accurate profile of you year after year.
