Suggestions on cut? My instinct is always to go with the longer one for more content but in a few films the extended cut has useless fluff that kills the pacing

Any platform attached to your Movies Anywhere account will update it if they offer it in 4k. So yes.

The extended cut isn't in 4K. So, that's one bonus of going with the theatrical version. I have it and it looks fantastic with HDR. I haven't seen the extended cut, but like you were saying, the extra stuff is usually just fluff. Generally speaking, most of that stuff doesn't end up in the theatrical versions of movies, because it wasn't necessary.

It's in HDR with Atmos. Just no Dolby Vision.
