Both of these sockets are end of life so there is no upgrade path other than existing CPUs.
The 5800X can be upgraded to a 5950X in the future. However, I don't see this as a logical or likely scenario for most people. Pure CPU performance, the 10850K is the better buy. It lacks PCI-E 4.0 support so if you have an NVME SSD that can take advantage of it, you lose this benefit. It does have an iGPU though which can be quite useful. Motherboard costs to features have mostly reached parity between the two as well. The difference in CPU power draw will mean that you are spending a few extra dollars a year to run the 10850K but it would likely take at least 10 years to reach that $70 in savings. Honestly, unless you just want to build an AMD system, I'd say go for the 10850K, depending on the deals you find on the motherboard, of course. Total platform cost for your specific use is more important than individual CPU cost when determining value.

I wanted the 5600x but it was OOS and way too damn expensive. Scalpers ruined it
BTW with these processors you gotta budget another 50-100 dollars for a decent cooling solution, might be worth it to just save that $70 and use it on a premium AIO cooler
