This digital version linked above gives you the same unlocks for almost all the physical toys they had released. You don't need to have the physical toys to play the game.
Ubisoft also has an expansion for sale that gives your even more digital ships and pilots. I don't believe these ever got physical toy releases.
You also have the option of using physical toys to play the game. It's one or the other when you start the game: either only physical toys or only digital.
Finding the physical toys is a bit of a game in itself. Some Dollar Trees have pilot and weapons packs for sale in the "Toys" section (obviously for a $1 each). I've picked up most of the released pilots and weapons. If I'm driving see an Dollar Tree I haven't been to before I'll stop in and see if they have anything I haven't picked up yet. Back in March 2020, they apparently had ships too, but I haven't seen any in any of my stops.
To use the physical toys you will need the mount that comes in the "Starter Packs" for the game. Either the XBox One version or the PS4 mounts will work on the PC version, but the PS4 version plugs directly into the USB port (there is no wireless mount option), while the XBox One version will only work through a XBox One controller paired with the PC. I believe you can also buy these mounts for either console separately.
You will need two mounts if you want to play co-op with two physical ship. If you have only one mount, one player can play with the physical ships and the other coop player can play with the digital ships.
You can get starter packs for pretty cheap too depending on where you live. They come with a pilot, some weapons, a ship, and a console version of the game. Check out Gamestops or Five Below's in your area; they usually have them around $5-$6.
Hope this help anyone interested in this! Let me know if you have any questions.

FYI, the game is OK and as you can see, I'm willing to give it a try in PC. Graphics on the switch were terrible but the gameplay, although repetitive, allows you to explore different planets in a complete open-world design, you can enter/exit a planet through its atmosphere in an immersive way, kind of what Star Citizen will be like.
The space exploration part of the game was cool to me, and although not hyper realistic, it's good enough that I got disoriented and lost a couple of times. So that comment is to say, you don't feel like a game "on-rails", it's definitely a "choose your own adventure" type of game.
However do note that the digital deluxe version (the version in the OP) comes with much of those things already unlocked.
Very smooth an polished. I loved it. 10/10

Short game, repetitive but $10 is no brainer.

I loved being able to fly around a planet, fly up into space, fight some enemies and stuff in space while actually flying to another planet… Rinse and repeat. Took me a long while to complete it all, except there is a bug on one achievement that haven't been able to get for the life of me… Sucks, because I wanted to 100% it so badly… oh well.

Is Starlink strictly single player or is there a co-op mode? If the latter, does it support crossplay between PCs and consoles?
At least it says offer good until 6/21 (or "while promotion last"... are they going to run out of the digital coupons or does Ubisoft have a set "spend" amount like Amazon and Chipotle often do which could end the coupon early?).

I'll agree the exploration was nice and the in-space battles were decent for what was otherwise a pretty 'normal space shooter game'. At least it really tried to use all three XYZ axis in a battle and there wasn't always a 'center' or horizon for the fights. It made a few fights more fun, learning to actually lead your shots and understand they can move any which way.

Some of the collecting the toys with this I found nice were:
1. There weren't 547 pilots and 390 ships to get along with whatever. Not saying you HAD to buy each item, I at least made sure I got each ship because they all looked cool to me. They're also pretty well made, the ships and guns at least, the pilots are a bit tiny and on funky stands so that it plays with the other parts of the toy, but all good.
2. There were a FEW special edition toys. I know there were at least 2 ships that aren't in the digital pack here. I got them to complete the ship collection at least, I think one was a Target exclusive and another Gamestop? They were just a different combo of ship things, you didn't get anything you couldn't obtain in the normal items or all digital versions. I know there is at least one special pilot that was some European exclusive. Given each pilot does have a unique combat ability, this may help more but with 9 others to pick... again you'll probably be OK without. It was some cute little fuzzy creature though. Also, keep in mind the Nintendo exclusives of Star Fox and his ship only work on the Switch. I found the handful of somewhat exclusive items OK - the ships weren't anymore expensive back in the day at their respective stores and you can't expect Nintendo IP to show up so easily on another system.
3. My son and I found out, after being silly, you can stick like 3 wings on each side of a ship from other ships. It looks BANANAS, and causes the ships to handle so strangely, but it's fun to do. I'm not aware if the all digital does this, but it seems like it wouldn't be as fun.
4. I remember the Dollar Tree sales. I never found anything, but I hope one day I stumble in and get the last of the couple pilots or weapon kits I didn't get before.
