I have only ever once spent over $1,000 on a laptop... THAT is a great reason to do so again.
Imo $1000 is the sweet spot. 3 years ago I picked up a 1060 6GB / 10850(?) / 256 nvme +1TB HDD for $1000. The 3060 linked Dell is replacing it, and I'll probably get ~$500 on 2nd hand sites for it. <$200 a year ain't bad for desktop-replacement-lite.
I know gamers don't want touchscreens, but i want something for video editing with touch screen. Anyone know of the screen option can be customized to touch screen... i don't see an option for it.

Then you answered your own question. It doesn't have a touchscreen option.
Silly question aka need some advice - I'm new to making gaming videos (for YouTube) and have been doing basic editing on regular laptop using openshot. Will having a graphics card speed up the process by decent gain in time? My current laptop is i3-8th gen with 32gb ram. I only do basic editing- overlay, transition, cutting sections joining multiple videos etc.
Second will this help with capturing videos in higher resolution? For example can I capture 4K? Or just 1080p with this GPU? (Over usbC)

Yes, this card has latest NVENC for encoding and decoding. It would help speed up if any software uses NVENC. Should do 4K.
Would this be able to hold 64GB or RAM? If so, what type of RAM would be recommend to purchase? This laptop would be using for data work, and excel craps out if low RAM.
