Do you like your steak a little pink in the middle? How about the whole steak being cooked like that edge to edge? You can't really overcook things unless you leave them for hours longer than needed (then the proteins start breaking down). You can safely undercook things as well (pasteurization).
I use mine mostly for steak, thick pork chops, and chicken thighs. Perfectly cooked and juicy every time. Set it and forget it. I tend to buy food in bulk on sale then preseason and vacseal them in the right portions so I can throw it straight from the freezer into the water bath.
If you don't have a vacuum sealer plan on buying one. You can do it without but it's a hassle.

Very easy to use. Pot of water. The food needs to be in zip lock dealed bags or use a food sealer with those bags. The app on your phone helps control it and sets the timer for recipies. Check out youtube vids. Great for beef. Its veryslow cooking. Pot or container does not need to be on the stove. I love it. I use it.
