I have many streaming services, so I'm aware of what's out there, and I'll take quality over quantity any day of the week.
At the moment, I have Apple TV+, Prime TV, Netflix, HBO Max and Paramount.
For example the quality of most HBO series is miles ahead of most Netflix series. Apple TV quality and production values is also above Netflix in my opinion.
Netflix makes a few good things, but there is so much crap that is released too. Netflix has obligations to foreign markets and they have to produce a certain amount of foreign content for those markets which is often crap and not interesting for American viewers.
Apple TV is still pretty new, so they obviously don't have the amount of content that others have yet, but I think that they're constantly adding new things, so over time, their library will only grow and get bigger and better. They are also willing to commit money to their projects and they don't have a habit of canceling series and killing them like many others like to do (Netflix).
