I've used one specifically for tea in the past. I know use it with my home gym.. 25 second timer in between each set. Stop timer and it defaults back to 25s.
Pretty useful instead of constantly using phone which is also playing my music.
Why don't people just use the timer on their phones? I would assume everyone has a phone these days

I use both this and a phone. The advantage of this is that you can set it pretty quickly when you have your hands wet or dirty. The IKEA one is also magnetic, sticks on the fridge and stays out of the way.
Wish Alexa can simplify the stop function like google home just by "stop" instead of "Alexa, stop".
I absolutely hate GH in the kitchen. With an Echo or HomePod Mini I can stop the timer from another room using another echo/HomePod. With GH I have to run close to the kitchen and yell "stop!" like some barbarian.

This is more reliable and doesn't leave the kitchen. I might have my phone on the charger in the other room when I'm home, or it's dead because of partying the night before and forgot to plug it in, etc. Sometimes single purpose gadgets are better.

I've got a dedicated Google display assistant for the kitchen.
The coolest thing is you can set multiple timers really quick compared to a phone or manual timer.

Looks like Walmart [walmart.com] has similar ones for $0.98 too.

Yes you can use your phone but for some they're still prefer to have these kind of timer handy like in the kitchen.
