Regarding cooking while traveling, If you want to be able to cook or heat something up while traveling, you can't go wrong with a mini electric skillet like this one (https://www.amazon.com/Cuisine-EF...en&sr=1-3)
The mini electric skillet also heat up leftovers wonderfully, just keep the power low with the lid on for 3-5 minutes. They get hot enough that it will cook a full fledge meal no problem. I like to take the skillet on road trips, along with a mini rice cooker and electric kettle (for coffee and tea). We get sick of eating out and we start craving a "home cooked" meal after a while.
Nice username btw. So I got it today delivered at her house and we took a quick test drive. It's pretty fast to heat up but the knobs are pretty stiff and smooth so if your hand got some oil it's a bit hard to turn. The knob on the top for timer is also what turns it off and like an old kitchen analog timer with the ticking sound and everything. Not bad overall for $20 delivered.

I do the same thing! I usually use a Korean BBQ marinade with chicken thighs and can fit 3 boneless/skinless pieces in there for a meal for myself.
