Although I have no clue how the 16GB 1TB is worth $360 more than the same I7 with 8GB and 256GB. Cheaper to just buy a 1TB NVME for more performance.

That's good to hear about DaVinci resolve. I would be using it mostly for Lightroom and Photoshop, nothing too intensive. Maybe some light video editing. I was worried that 8 gigs of RAM would not be enough. Do you think this would work for my needs?.

The soldered memory is far faster than SODIMM. It is LPDDRX on both of them. 4266 not 3200. So if you get upgradable memory with a different brand it will be slower memory.
So I can see why some would be willing to pay $360 more for it.
