Eventually these will get big enough that it will make sense to set them on the floor instead of wasting counter space... And we'll put burners in the top for pots and pans... And everything old will be new again.

Get a Breville Smart Oven Airfryer Pro Oven. It bakes, air fry, dehydrates and just replaces your big oven. We have used ours for years and find the counter space is not wasted on a limited-use product. Expensive but it is not a toy...

You should check out a microwave oven + convection oven. It can be used as a standard microwave, a convection oven for baking/roasting. And one of the best features is the ability to use the convection setting along with the microwave setting at the same time cutting cook times by 50%
We have an older version of these microwave+convection ovens from over 10 years ago. It's called a Half Time oven and are looking for a replacement as it sounds like it's starting to go out.
We use it everyday and we no longer use our standard electric oven anymore. I find electric consumption is lower because the unit maxes out at 1800 watts but only runs for 30 to 40 minutes vs a full sized oven to bake cookies or dinner when using the microwave+convection oven feature.

I think this is close to what we have our at the least an example of one.
