X-T3 or XS-10 for mostly photos of my little kids? Leaning towards the xs-10 for the ibis.

Also thinking about a Nikon zfc.

You can do that with either tbh. I use my T3 for my kids pics. Comes down to the IBIS, dials and form factor.

Used to own a canon DSL and a bunch of L lenses and was really into photography until life, kids, work became a priority. I eventually ended up selling all my gear as I knew the change was coming. I want to get back into photography, but it looks like a lot has changed in the last 5 years. Would you recommend this camera to Sony or Panasonic? Main thing I want to be able to get good professional lenses second hand and go for a camera that's in demand in case I decide to sell them in the next few years.

What are you shooting with now? Pretty much mid-tier or higher smartphone can handle family photos easily. Any M4/3 or APS-C sensor camera will do the job too. Make sure it has flash and learn to use it as it. I highly suggest you rent before you buy and if somewhat new to photography, take some classes. Join a camera club or meetup photography group to help take you to the next level. Btw, full frame is not needed for fashion, or even weddings, etc. It all gets down to you knowing your gear.
The worlds top fashion photographer uses Fuji X-T3 & XT4.

I'm a big fan on fujifilm and prefer them to Canon, Nikon, Sony, etc... I like the amount of buttons and controls they have and their interface is pretty intuitive. There are also a good amount of lower cost lenses out there too, specially second hand. I do feel like cameras can be very subjective so it'll really boil down to your preference. That said Fujifilm is a well respected brand and has a lot of brand loyalists out there.

Why not just go back to canon? You already know the system and use to the colors. R6s is a great camera and you can use any of your ef lenses.

I use a Fuji xt30 and vintage manual lenses so I mean you can always keep your older lendes

I had Canons from Rebel T1s up to 5DsR. Switched to Sony at A7RIII (had for 3-4 years now, or however it's been out) which I still use, some Canon lenses with adapter. I'm a huge pixel peeper. The Sony is faster than the DsR was, but IMO, they're still both beautiful cameras. If budget is a concern I'd go with Canon (lower cost for old bodies I think and many great used L glasses for sale since many lines have been updated). If money is no concern I'd probably still go with Sony (look at 3rd party lenses like Tamron), but haven't kept up as much on Canon's digital offerings.
