But is you get the SE you will only get $400 in trade in value. The iPhone 11 will give you $800

BUT

About 25% Of SD users have reported having luck using a Tracfone sim, which is currently on sale for a years worth for $40.
Simply check the compatibility of this phone with customer service (e.g Verizon) then buy the correct Tracfone Sim:

Haven't done it myself but the little I've looked into it says that the unlock is good unless you update via pc or Mac iTunes or factory reset the device... So OTA updates will not reset the SIM lock

correct, Ota updates work fine
I have been using rsim since around iOS 13 and updates work fine.

How do you get $800 for the SE? Looking at Verizon now, it tells me an SE tradein is $400 but an iPhone 11 is $800.
