Got a white OLED switch used from Amazon Warehouse in "acceptable" condition for $275 and received, other than missing the box, a very clean unwrapped Switch that did not seem to have been used. If buying for yourself consider that option if it's available! It's not worth $75 for a box IMO.

You act like it's that simple. These have been sold out since launch. You can't exactly just find them on Amazon warehouse. You lucked out, but good to know it's possible.
Do switch games(non digital) get cheap after being out for years? Last I heard, not really.
Also, they didn't update the processor at all in this model, right?
They did not update processor. They updated internal memory to 64GB, better stand, added LAN port to dock and bigger OLED screen.
And yes, generally for switch games, you cannot find great discounts like you find in Xbox or playstaion. Particularly the Nintendo's Mario games wont go down in price.
I suggest dekudeals website to track the switch games prices.
