Mario Odyssey is the most open-world style Mario ever- it has a bunch of huge kingdoms to visit and much of the fun comes from simply exploring every nook and cranny to find power moons, possessing enemies and finding hidden platforming challenges. It's a perfect game if you enjoy the world design of Mario 64, Sunshine and Banjo Kazooie.
On the contrary, Mario 3D World is highly linear with much smaller levels and a much greater focus on technical platforming challenges (it's basically a 2D Mario game reimagined in 3D). The difficulty level can be much higher, especially if collecting all the extra green stars, and lots of the post-game content is locked behind high star requirements so it's not as beginner-friendly.
if you want a game that's fun and relaxing go with Odyssey. If you like something that's more challenging but rewarding (or plan on playing with other people) pick 3D World.
