You're thinking about dual channel. Dual rank is 2 addressable ranks of memory on the stick, switched by the CS bit on memory commands. It introduces latency in one regard, but efficiency in another. And can be about 5% overall improvement. If you care about that 5% you'll be willing to spend more on 3600 CL16 or on B-die and become knowledgeable about OC and memory subtimings. Here, I wouldn't worry about it.

Simple. Supply and demand. If 99% of computers in the market are using ddr4 then ddr4 is going to be mass produced leading to more competitive pricing. The ddr5 market is extremely small considering only intel's alder lake supports it so far thus results in lower priority for manufacturers and higher prices. The latest and greatest will always come with a high price tag.

That being said I picked up two kits myself to upgrade my machine to 64gb for data science as I often find myself maxing out on usage from 32gb. I can't imagine the average user or casual gamer needing beyond 16gb currently but definitely a solid deal for quality ram.
