So will they color match at the discounted price ? Or if trying to color match or tin they will use standard pricing ?
They will colormatch, but i don't think they are allowed to dump out the headroom to make the other bases. So you would only be able to mix very light colors with this.
There was quite a bit of both 1 gallon and 5 gallons in flat, satin and semi gloss available at the store I stopped at today.
I grabbed 2 gallons. Probably should of just grabbed a 5 for the same price but don't think I would use it before it goes bad.
Online doesn't seem to show the 5 on sale at least for me. But I've used paint years old that still seemed fine. Probably depends how well it stays sealed and stored.

I was told the semi gloss is ideal for wood trims.

Typically an exterior can be use for interior but not the other way around
You can but you probably shouldn't. Exterior paints contain more additives that can be dangerous. They also have more VOCs
