This. Ceylon cinnamon is considered a better cinnamon when it comes to that chemical anyway, and also has a milder taste that some may or may not prefer (I prefer it). I get mine at Whole Foods and it's about $4 for one of the small glass jars with the whole foods in house brand I forget the name of.
Costco also has Saigon cinnamon which is stronger and more flavorful.
THIS! Once you have had the Saigon cinnamon, nothing else will measure up. If you wonder why you cinnamon rolls don't taste like Cinnabon, this is (at least one of the reasons) why.

It is not cinnamon if it's not Ceylon (Srilanka) cinnamon. In most European countries they won't it even let them sell it as cinnamon if it's not Ceylon cinnamon.

Saigon cinnamon is a species of cassia cinnamon with a stronger flavor and aroma than other varieties. Though it's considered to be lower quality than Ceylon cinnamon, it's less expensive and easily found in grocery stores. While Cassia cinnamon is safe to eat in small to moderate amounts, eating too much may cause health problems because it contains high amounts of a compound called coumarin. Research has found that eating too much coumarin may harm your liver and increase the risk of cancer.
