The paleo one is not fluffy because it has coconut and casava, I used a mechanical beater (and added milk, nor than suggested) and it's still somewhat tough however it is filling and taste good.
Great brand for gluten free (Paleo variety). I also like that these are much lower in carbohydrates than regular pancakes (low glycemic impact). These are also quick and easy to make in a microwave in a small bowl if you are running short on time or patience. The microwave pancakes come out very fluffy. Grocery stores sell this brand in small containers just for microwaves, but it is much more economical to grab these larger bags and use a bowl.

There tough because you used a mechanical beater, You should hand mix as little as possible and they will be much better.

So I tried it and... Well it works but... Still pretty dang stiff for a pancake. I really think it is because of all the other stuff inside lie the casava and coconut, maybe the monk fruit too but a normal pancake should be no issues. Taste great tho! Butter and syrup yummmm

Microwave pancakes?! How do you do that?? And fluffy??
Ive eaten thru a large Costco version bag of the Paleo mix, I think it's pretty good actually for no grain flour's. They stay together well, my only complaint is they are a little sweet if eating plain. I usually add an egg and chopped apples which makes them pretty good.
