The 750 watt power supply is not available for the Dells with 11th gen, but if you do go for a 12th gen, I agree that the larger power supply is worth getting even if you don't think you need it.
And if you do buy the 11th gen on sale here and want to add aftermarket RAM, be careful what you choose as most higher speed RAM (e.g. 3200MHz) will only run at 2666 or 2333 in these machines. To have additional RAM that runs at same 2933 speed as the stock RAM, it must be rated to run at 1.2V. (Most newer DDR4 RAM is specified at 1.5V.) A couple of known compatible RAMs are Crucial CR16G4DFR32A (1x16GB) and CT2K8G4DFRA32A (2x8GB).
Also, if you want to upgrade the stock CPU cooler that comes with the 11th gen, the ARCTIC Freezer i13 X is an easy plug-and-play upgrade. (Even comes with thermal paste pre-applied.)

Id be super careful if that's your goal. Used market is becoming over saturated and prices are going down. A good true of thumb when miners are your expected audience is to not expect them to pay more than the profits of 1 year of mining maximum. Right now I think that's about $500 at current rates. Don't expect more than that unless you can sell it very soon.
