I'd agree with that. I am at 5tb for a portable hard drive with photo archives and projects and while they're not huge hard drives.. I can see carrying a few of these ssds taking less room

If you value volume consolidation, portability, and speed more than low price, several companies offer 8 TB NVMe Thunderbolt drives in an only slightly bigger package. However, they're about $150 more than this for every 2 TB (so you can compare apples to apples).

How hot do these external nvme ssd's run anyways? Every brand and model have people in the review say they are hot to the touch even at idle.

I never measured the temperature on my 1tb version but it does get hot if you're transferring a large file. I've had zero issues though in a year or so of ownership.
