The Queso at Chipotle is advertised as being fresh and not processed. This is why some people complain it doesn't taste as good as it doesn't have all the junk the 'good' queso has.
I think the queso is decent with their chips. On a burrito/bowl it's meh.

I recently discovered that queso blanco is fairly easy to make. It's just white American cheese + diced chili and jalapeno peppers + milk. I can make a cereal bowl-sized portion of it for a few bucks.

A burrito is also easy to make...as is quac. You're paying for their version of it and the convenience.
That being said chipotle has really fallen off quality wise near me. I do think they have better ingredients vs Qdoba, Moe's etc but just isn't as good any more in terms of the taste and experience (always sloppy and messy, staff is rude, etc)

Agreed. I hadn't been to a Chipotle in awhile and got a fast meal. They now charge $1.60 for queso. I know they always charge extra for guac. Yet at Qdoba you get both plus a small side of queso and chips. Don't see myself going back any time soon.
