I would note, however, that it is just about impossible to sharpen. This stainless laughs at Arkansas stones and spits at Carborundum. I've sat for an hour trying to sharpen it with a diamond stone and can't get it to take a good edge. Once in a while I take it to the grocery deli counter, ask them run it through their commercial machine, and while it doesn't end up carbon-steel sharp that seems to be as good as it will ever get.
If you want a razor edge this is not the knife for you.
