From Sur La Table:
Demeyere and Sur La Table's Silver7 Collaboration
"The product of two years of collaboration between Sur La Table and Demeyere, Silver7 cookware offers revolutionary seven-ply clad construction combined with two types of state-of-the-art technology to deliver the fastest and most even heating distribution to be found anywhere. TriplInduc, a special combination of three alloys, is laser-welded to the base, which also incorporates InductoSeal, a 2mm layer of copper between two layers of silver, hermetically sealed in 18/10 stainless steel. Use Silver7 cookware with all heat sources, including induction.
Silver7 cookware also retains its beautiful silver-white color thanks to Demeyere's proprietary Silvinox® finish, created through a series of electrochemical treatments that remove surface iron and impurities, the main causes of cookware discoloration over time. Silvinox®-finished Silver7 cookware also resists discoloration from fingerprints and heat, even at temperatures over 500°F.

Cleanup is easier than on non stick if you follow their instructions when cooking.
I have no experience with the industry (non copper version.)
My score in the last six months:
Atlantis KitchenAid 2qt and 3 qt sauce pans $65, $75. Double insulated lids. Gilt.com deal
Demeyere KitchenAid Professional 7-Ply 11 inch 28 cm Skillet $63, better than Industry but not Proline Gilt.com
All-Clad 12" D7 fry pan flawless new old stock 2018. Unobtanium. $100. This thing is a work of art. Yes A-C does know how to make a proper handle. Nothing of this quality coming out of A-C these days.
Silver7 double layer lids are moisture and heat conserving. I've only seen them on the K-A Professional and Pawson lines. Excellent for slow and water-less cooking. Heavy duty domed ss lids are real hard to find and expensive when you do find them especially in euro sizes. I'm hoping that this 24 cm lid will also fit the Proline skillet and Staub c.i. Anyone with a PIC portable induction cooker will appreciate this 24 cm size.
Since we are talking lids I ordered the Scanpan 28 cm glass lid for my the 11" 28 cm K-A Pro Deme skillet. It works but its a tad loose same as Staub 28 cm c.i. lid. I'm guessing that Demeyere makes their cookware opening slightly larger than standard. Deme is purportedly consistent across their lines so that you can share lids.

That's for the fry pan. I don't know how your saute is constructed. I strongly suggest watching the Demeyere videos where they explain their philosophy of purpose-specific design and where they choose conical or clad over Inductoseal base. What and how one cooks, the heat source and the burner diameter should drive one's choice of cookware.
Regarding the Inductoseal base on the Atlantis saucepan never before could I set a pan on portable induction flash heat water and get it to hold 170F. No more electric tea kettle. I have yet to compare that technology on the saute to multi-ply fully clad but many claim richer fond and better overall results. Which makes for a better braiser?
The difference to me is cosmetic. AC dulls as you use it and scratches easier. You will need to polish the copper rings if you want it to stand out. The Demeyere has this Silvinox finish that keeps it shiny. It also does not have inner rivets so bits of food don't get stuck and it's better when you stir sauces and when you clean it. Also the Demeyere handles are a little longer and angled flatter - I find it takes a little more space to store.
You'll enjoy your AC copper core, but try a Demeyere piece and see if you end up liking it too.

The A-C saute design requires a the use of a more delicate outer layer of stainless as a magnetic magnetic layer for induction. Atlantis uses a tougher steel on the exterior relying instead on a TripleInduct bottom skin which works in conjunction with the Inductoseal bottom to absorb and transfer heat. These are two completely different design concepts. Induction users greatly benefit from Inductoseal but weight is an issue for some users especially on the larger sizes.
The price reductions suggest to me that the importer Zwilling intends to limit what it imports from Belgium in favor of Asian production. Just a guess as I have been noticing unusual price drops on Demeyere. I got 50% off the already discounted price. Good luck!

I can't tell you how nice those proline skillets are. I have the 9.5" from a SD sale, and I sucked it up and bought the 12.6" from Costco back when they sold them. Expensive, but still worth it. And once I owned those two skillets, that stopped me from buying the kitchenaid versions when they showed up on SD. (Not sure if there's a real world difference in cooking performance between the thicker prolines and the KA deme versions - since, of course, I've never tried the KA deme skillets.)
