Yes you can use any vacuum sealer, but IMO this model is annoying to use as a sealer. Got my brother a similar one where the bag is kept internally, it's just more of a PITA and it makes for a bigger device. I also found that it used up more bag material and wasted an extra 1-2 inches per bag. Storing the bags inside the device doesn't really make things easier IMO.

Ended up getting this Anova one to replace a food saver that was similarly designed. Very happy with the Anova unit. Compact, easy to use.

Costco sells a Kirkland branded vacuum sealer bags. It's $25 and has 2 extra rolls over the Food Saver version and has extra precut bags. I got it for $20 when it went on sale about a month or two ago. So far it's holding up well.

Just picked one of these up last week. I assume Costco does a good job of honoring price changes?

I actually found the 1-2 inch gap to be good for catching the marinate right before stopping the vacuum and seal the bag. Compare with the cost of the meat inside the bag, that little piece of bag is nothing. I got the bags at Costco when it was on sale a few months ago. It is like 50 cents bag cost per cooking. So the 10%-15% extra is nothing.

I assume the Anova works with any bag including the one Costco sells?

I am using a Costco model for years. With so many steaks, it is surely worth the money. But I agree it's big and I can't see where it seals. It can be frustrating when I thought I pushed in enough bag but it just won't start.

I purchased this last time it was on sale and ended up returning it. It did not have a very strong vacuum and frequently sealed the bag before all the air was removed.

I have this exact model, it works fairly well but sometimes needs to be double-heated to get a reliable seal if your submerging meats (sous vide). Also, my biggest gripe is that the angle and swing path of the door forces you leave a lot of extra bag at the top to reach the heat strip. In other words, it seems to waste about an extra inch (compared to other models) at the top of every bag if your items are thick. (ie fillets).

Pro Tip: Make sure you buy the legit bags from amazon or Costco, there are quite a few cheapo substitutes on amazon that dont seal very well and waterlog your marinades.

I'd say that the Costco deal is great too if you need the 11in width and the separate quart bags (though, you can make your own from the rolls...). If you just need the rolls, the Amazon link above is definitely better.
