It may be a common use, but it's not so common a home DIYer needs to be concerned with it. I've had this saw for 2 years now, never once have I wished I had the 10" version to have dados.
But of course this all depends on what you plan to do with it. If dado cuts are common for you, don't get this or change your workflow (I instead either do multiple passes or use my router). but if you're doing minor home DIY projects like trim, decking, etc., there is no reason to pass on this.
The only thing i'd question here is the fact that it is amazon. Call me tin foil hat, I just don't trust them anymore. Refurb'd products instead of brand new, repacked returns that were faulty to begin with, knock offs, etc. Plus, i'm not sure if this applies but i don't think amazon is an authorized reseller which means Dewalt can refused to honor their manufacturer warranty (i'd look into this, i may not be right but it's something i'd be curious about).

Seems like a deal for just the item on Amazon. Per CCC this was listed Jan 25, 2020. The all time low since then was $299 in February of this year and it averages around $377. There might have been a better bundle from Home Depot in that time - I don't know, I don't follow these saws that closely - but for just the item itself, yeah. Good deal.
Also note the 10" DWE7491RS that comes with the rolling stand is down to its occasional sale price of $530. LINK[amazon.com]
I think MSRP is $650 and it is usually $600 and occasionally has been on sale for $530 but I haven't seen it lower. It is really nice, fence is excellent for a jobsite saw. I would assume the smaller 8 1/4" one is also very good.
Is this a good table saw for a DIYer home owner? Really having a hard time figuring out what the right saw is.
The only knock on this table saw is the lack of saw blades, compared to the other sized table saws. If you are a DIYer, this should work out fine, although I would hold out for a deal with a stand included.
If you do much work with decking or large material, this saw is great. Really wish this had a 10 inch blade as I have a stockpile of 10in blades and love using tables saws for large molding.
Also note the 10" DWE7491RS that comes with the rolling stand is down to its occasional sale price of $530.
Other then the obvious difference between the DWE7491RS vs DWE7485; stand, blade diameter, rip width. What are the important and subtle differences between the two?

It depends on what you're trying to do.
It's good for smaller works. It means that using a circular saw with a guide will be often preferred.
Also no dado blades - if you need one.
On another side, it's not as heavy, so I can easily get it from the basement when I need it.

The main issue is the lack of the capacity to install a dado stack --- one of the very common use for a table saw.
