Best to invest in a Kill-A-Watt device to see how much power your fridge uses at startup and while it's running. The marketing says this can surge to 1000w.
My guess is, though, you might want to invest in a power station that's a bit larger.
One other thing to note - there's no AC pass-through charging (looks like there may be DC pass-through, though). If it's an outage that extends for a while, you couldn't have it both powering the fridge and charging.

i was also thinking of doing a diy setup as all i really need is a battery, a 12v outlet, and a way to charge it when we are using the truck. the inverter, built in MPPT charger, etc isnt really necessary.

Another important consideration is the maximum solar input. You want to be able to charge it with a lot of solar.
Regardless I will would never waste the money on this for that type of senario. It would only be able to run a fridge for a couple hours max where is not needed. A small inverter generator would be cheaper and a much much better option.
But I've never bought into either because my power doesn't really ever go out
