Doesn't CAT7 need special keystone jacks to work? Something about them being proprietary and not an open standard. I'd love to wire my house with CAT7 or CAT8, but it's hard to get a hold of stuff I need for either.

No. Cat7 will plug into any RJ45 jack. You might not get the full benefit of Cat7, but any jack will work.

If you are cutting and terminating a cable, (putting the 8 wires into a connector) then you will want the cat7 version of the jack or plug. You will also want a Cat7 crimper (or use tool-less jacks)

Since this cable already comes with the connectors, you don't have to worry about that.

Some keystones are Female to Female which means you plug it in on both sides. Since these cables already have plugs on them, you probably would want a female to female keystone if this is for inside wiring.

But if you really want to ensure Cat7 quality:

I have strong doubts you would be able to notice a difference between a cat6 coupler and cat7 coupler with any common uses, but I haven't dug deep into this to know for sure.

I'm wary of Amazon Basics products. Unless it's something they can't screw up, like a foam garden kneepad mat -- I treat it like Horror Fright. If it takes electricity, then it's liable for starting a fire. If it carries data, it's liable to corrupt it.

More than once, I got a scAmazon Basics cable that just plum didn't work -- or failed within a reasonable period of time & usage. It's just not worth my effort anymore to buy them.
