Note: if you already have an account you've done the conversion on, you can do this on a new account and then make your console that accounts "home console" and take advantage of this offer. If you use multiple devices, this would not work as you are limited on the amount of times you can change your home console.
You can extend your Game Pass Ultimate subscription using Xbox Live Gold codes (3 months XBL Gold converts to 50 days GPU). You can see a conversion chart this FAQ.

The other option is let your GPU subscription expire, then stack XBL Gold and upgrade / convert into GPU again. This is much cheaper than extending an existing GPU sub.

They limit you to a maximum of 2 codes per transaction, so I bought 2, 2, 2, 2, and 1 for 9 total. Using the recurring billing toggle (step 2), this will ultimately give you 3 years.

Not long ago I know even if you had made the conversion from Gold to Ultimate previously, it would still convert all remaining by paying full price for one month. Does it not do that now?
