It is one of their best selling line, forged and not stamped blades, considered a workhorse in the kitchen and the starter for many chefs in culinary school and going into the professional kitchen. It is
FORGED and not a stamped blade so hence the higher cost than the budget knives. Synthetic handle so no swelling from water and less chance of bacterial growth, riveted instead of just glued for aesthetics, half bolster so much easier to sharpen on a whetstone than a full-bolstered knife. As a German blade it is heavier than the Japanese gyuto so with a thicker and stronger blade which are more robust and will handle the toughest jobs, such as cutting through pumpkins, watermelons, thick cuts of meat etc. (for more finesse and control cutting you are better off with a gyuto or smaller/lighter knife)
