You're basically getting the other components for about $50 and paying MSRP on the 3070.
Reviews on the motherboard are not great and the PSU only being a 750w bronze means you're going to be limited on CPUs and upgrade paths later down the road. Someone mentioned putting an i9 in this and not only is it overkill, but you'll be pushing the power draw quite a bit.
Watercooling is also probably out of the question due to case constraints and the PSU limitation. You might be able to do an AIO for just the CPU, but the 3070 is what I'd want to be cooling.
If you don't absolutely need a 3070 immediately, I'd give it a few more weeks. Card prices are dropping like crazy.

Price wise this is excellent cause a 3070Ti BNIB by itself is $700, so your literally almost only paying for the price of the graphics card.

Enough jokes aside, If you have a low end/ low mid range system it might be "ok" since those components don't create too much heat. I would never put higher performance parts in this case personally. Seems like an oven with how poorly designed the intake area is. A Ryzen 5600(non X) or i5 12400 would probably be the highest I'd put inside this case and for GPU maybe like a 3060 ish level GPU. Anything higher than those might have some heat issues in the GT501 case. Alternatively you can just remove the front panel completely. allowing maximum airflow but that might look bad.

I could easily put a high end CPU in this especially since its a full sized case and not a mATX.
In short the case is perfectly fine for a high end build.

So, I'll ask... why? checking reviews and tests, it looks like the i7-11700K is comparable to the Ryzen 7 5800X. differences appears to be in the single % range and would change chip to chip anyway. the i7 is currently 10$ cheaper at Microcenter as well.
I could totally be missing something though...
In all honesty, even the 11700K doesn't look great... even the 12600K is better than it, by a good margin. 11th gen seems like a pretty big misstep.
I bought a 3900x last year and now am just sitting here trying to figure out what to do for the other components..these barebones are getting amazing
